Kagemusha perhaps? Kurosawa used paintings as storyboards and it really shows in how fantastically painter-like it was.

Anatole Litvar's Anastatia makes very good use of color.
Antonioni's Red Desert? he practically painted the scenery to get the right colours

Oooh, i thought i had Vertigo- of course essential- but did already have The Conformist. In fact Marnie makes an interesting pair with Vertigo, for its colour schemes too
Hitchcock 's Vertigo and Bertolucci's The Conformist are notably lacking but great list in general. I loved the additions of Don't Look Now, Godard's early technicolor films and The Flower of my Secret.
'She wore a Yellow Ribbon' or 'The Searchers' would be good additions.

Yes, Christopher, i've already got The End of Summer of the Ozu colour films, but did think of Floating Weeds too (and with cinematography by the great Miyagawa), and Javier yes Pistol Opera is another goodie i was thinking of.

I'd suggest "Pistol opera" and "Antonio Das Mortes".
I saddly have to say that "Kagemusha" could be a perfect example, but some scenes lack the rigorous colour concept that other parts of the film do have.
I miss "El sol del membrillo" here. I think that film has no colour at all, but magically, lights come and go, in front of our very eyes.. and colour just appears. That's it's colour concept I guess.
ah yes, good suggestions, i originally intended Cries and Whispers and was thinking of including Malick (could be more than one) just when i went out.
Great idea for a list. I also suggest to include "Nostalghia for the Contryside", "Juliet of the Spirits" and "Days of Heaven".
