Linklater’s A Scanner Darkly has a pretty good head explosion in it too.
I second Scanners. What a great introduction to Michael Ironside’s character.
Scanners takes it but I seem to recall some good head splattering in Akira.
Not technically an explosion, but the diver’s head being bitten off in Lake Placid was pretty great.
Carter Wong’s head (and whole body) exploding in Big Trouble in Little China.
There’s gotta’ be some classics in ’70’s Japanese cinema but I’m drawing a blank.
Rocky and Bullwinkle beat me to it, but the one in The Proposition is pretty wild.

And there was some early 90s or late 80s film where these guys are imprisoned and they are forced to where these neck collars that would explode if they escaped the facility – I THINK it had Rutger Hauer in it. This film had one of the best head explosions I’ve ever seen! If someone could identify this one, that’d be spectacular!
The best part about the one in The Proposition is how it comes out of nowhere. It’s just like, oh my god Guy Pearce has a spear through him! That looks painful! Oh my God that guy’s head just exploded!!

I think the film Brian’s referring to is Stuart Gordon’s Fortress with Christopher Lambert. No Hauer in that though, perhaps he’s thinking of Salute of the Jugger, but I don’t think there’s any head explosions in that.
